Boiled black-eyed beans in salted water . The Indian names include Alachandalu, Karamani, Pairu, Lobia, Alasunde, Lobia, Chauli Phalli, Karamani, Pairu, Chawli, Naduka, Rongi, Safed Chola, Lathande, Lubia.

It is used in preparing southern-style dish known as Hoppin' John (a mixture of black-eyed beans, bacon and white rice, traditionally eaten on New Year's Day).
